Is anyone else up baking right now? I try to use my time wisely, but there are some things that have to be done while the child is sleeping. Today, the baking I wanted to do could not be done until now. Late at night. Well, it’s late for me. Probably not for a lot of people. I had fun though. These pumpkin spice cakes are really easy to make, and eat, and it’s a weight watchers recipe so it isn’t “as bad” as other things I could bake.

All you need is a box of spice cake mix, 1/2 cup of applesauce, and one can (15 oz.) of pumpkin.
Mix it all together.
Bake it at 350 degrees for 30 minutes if using a normal cake pan.
I used these nifty rubber pumpkin and leaf molds that I just got. It took about 15-20 minutes to cook each batch. I was able to make three batches from the molds. I found the recipe online with more in depth instructions for anyone looking for that, but the lady called for water instead of applesauce. I like using the applesauce personally, but water can be easier to get. I have sampled them already and am one hundred percent satisfied. So yummy! Tomorrow I share them with family 🙂
